Hey everyone! I hope you are having a great memorial day!

Memorial Day is known for grilling, spending time with your family and relaxing. Here are some delicious recipes you can try that are healthy and delicious!

Grilled Marghertia Portobello Mushrooms 2 PointsPlus Value Serves 4

4 item(s) portobello mushroom(s), stems removed, wiped clean
1 spray(s) olive oil cooking spray
1/2 cup(s) shredded part-skim mozzarella cheese
1/4 tsp garlic powder
1 tsp dried oregano
2 medium plum tomato(es), sliced into 1/4-inch-thick slices
8 leaf/leaves basil, fresh (for garnish)

Instructions
Heat a grill or grill pan to medium-high heat.

Coat mushrooms with cooking spray; place on grill, stem-side down, and cook, covered, 4 minutes. Uncover and using tongs, flip mushrooms; cook for 4 minutes more.

Meanwhile, in a small bowl, combine cheese, garlic powder and oregano.

After mushrooms have cooked for 8 minutes, remove them to a tray and reduce grill heat to medium-low. Fill each mushroom cap with about 2 tablespoons of seasoned cheese. Place mushrooms back on grill and cook, covered, until cheese melts, about 2 minutes.

Remove mushrooms to a serving plate and top with tomato and basil. Yields 1 mushroom per serving.

Notes
Enhance the flavor of the mushrooms with a drizzle of high-quality balsamic vinegar.

Blue Cheese Chicken Burgers 8 PointsPlus Value Serves 4

Ingredients
2 spray(s) cooking spray
1/4 cup(s) barbecue sauce
1 1/2 tsp hot pepper sauce, or to taste
1 pound(s) uncooked extra lean ground chicken breast
1/2 cup(s) uncooked scallion(s), sliced
1/4 cup(s) uncooked celery, chopped
1/4 cup(s) dried plain bread crumbs, plain-variety
2 tsp minced garlic
1/2 tsp table salt
4 item(s) mixed-grain hamburger roll(s)
2 cup(s) romaine lettuce, shredded
1 large fresh tomato(es), cut into 8 slices
2 Tbsp blue cheese, crumbled

Instructions
Off heat, coat a grill or grill pan with cooking spray; preheat to medium-high.

In a small bowl, combine barbecue sauce and hot pepper sauce. In a medium bowl, combine chicken, 1 tablespoon of barbecue sauce mixture, scallion, celery, bread crumbs, garlic and salt. Using wet hands (to prevent mixture from sticking), form chicken mixture into four 1/2-inch-thick patties; brush top of burgers with some remaining barbecue sauce mixture.

Place burgers on grill, sauce side down; brush tops of burgers with remaining sauce. Grill, turning once, until cooked through, about 10 minutes. Lightly toast open-faced buns on grill during last minute of cooking.

To serve, place 4 bun bottoms on each of 4 plates. Top each with 1/2 cup of shredded lettuce, 2 tomato slices, a burger, 1/2 tablespoon of cheese and a bun top (cheese will melt a little from hot burger). Yields 1 burger per serving.

Notes
If you like your food really spicy, give the lettuce and tomato a few shots of hot sauce.
Garlic-Herb Grilled Corn 4 PointsPlus Value Serves 6

Ingredients
6 medium corn on the cob, in husk
3 spray(s) cooking spray
1 Tbsp regular butter
1 Tbsp olive oil
1 Tbsp thyme, fresh, fresh, chopped
1 tsp minced garlic
1/2 tsp table salt
1/4 cup(s) parsley, fresh, chopped

Instructions
In a large pot filled with cold water, add unshucked ears of corn; soak for 10 minutes.

Preheat grill or a stove-top grill pan.

Remove corn from pot; pull back husks (be careful to leave husk attached to corn) and remove as much of silk as possible. Coat kernels with cooking spray; cover corn with husks again.

Grill corn, turning every few minutes, until husks are blackened and charred and corn is tender, about 15 to 20 minutes.

Meanwhile, melt butter in a small microwave-safe bowl or cup. Stir in oil, thyme, garlic and salt.

To serve, pull back husks to expose corn and use husks as handles. Place on serving platter and brush butter mixture over corn; sprinkle with parsley (and additional salt, if desired). Yields 1 ear per serving.
